As the bushes emerge from a prolonged winter rest, slow early growth develops concentrated freshness within the shoots. Carefully plucked as two whole leaves and a bud, the leaves undergo very mild, natural overnight oxidation with minimal mechanical intervention.

The bright green leaves brew into a bright, light yellow, fully transparent liquor with a clean infusion. The cup reveals a mellow fruity sweetness with defined notes of olive, peach, and vanilla.
